Pasta with Three Cheese and Peppercorn Sauce

Cooking for me is like therapy. It helps me relax. I usually find time to cook a nice dinner for all of us in the evening, but sometimes there is no time. Tonight was one of those night. Papers to fill for the kids, things to do here and there….So since I was pressed with times, and we had leftovers meat, all I needed to fix tonight for my little family were the sides. Though choices are boundless, with the “difficult mouths” I have here, I was bound to fix some carbs, and of course no vegetables. So while I ate salmon, they had three cheese pasta.

Ingredients for 4: pasta of your choice, 1 tbsp of butter, 2 cups of heavy cream, 1/2 cup of asiago cheese grated, 1/2 pecorino cheese grated, 1/2 parmesan cheese grated, 1/4 tsp of fresh coarsely ground black pepper.

In a large sauce pan, pour water and add 1 tbsp of sea salt. Bring to boil. When the water is boiling, throw in the pasta and cook until al dente. While the pasta are cooking, prepare the sauce. In a small saucepan, melt 1 tbsp of butter, when the butter is sizzling, add the heavy cream and bring to boil. Add the cheese, and stir it is completly melted. Turn the heat down and add one egg. Stir until the cream is thickening. Be careful to not overeat or the sauce will curdle. Add the coarse peppercorn and mix well.

Drain the pasta and add 1 tbsp of butter. Stir.

To serve, place the pasta on a plate, and spoon the sauce over it. Sprinkle more grated cheese and more ground pepper.
