Pomme de Terre Savoyarde ( Savoyard Roasted Potatoes)


Last year a very good friend introduced me to the wonderful Asheville Market. We went there to buy pumpkins and flowers to decorate the house for the fall. Because I had such a good time, and wanted to do something fun with my children, I dragged my family to  the Asheville Market again this past week-end to get pumpkins, and fresh autumn vegetables. We even went to a corn maze and the Biltmore Village. What a busy day! But we had lots of fun! I bought lots of produces of course. Everything looked so good!!! I bought apples, beans, potatoes…. Have you ever bought new potatoes?!?! If you have not, You must! They taste so different from the other ones. They are so much sweeter and need nothing, just a little bit of salt and butter;-)

Since I had purchased those new potatoes, I fixed a raclette that same evening. My family loved it!!! Well since I had a few more potatoes, I decided to fix an easy dish this evening: Pomme de terre Savoyarde. It is easy, very tasty and fast!!!

Ingredients for 4 people: 12 small potatoes, 1/4 lb of capocollo ham, 1/4 lb of raclette cheese or any other strong cheese such as morbier, comte…, 1 small purple onion, 1 tbsp of fresh thyme, salt and pepper.

Place the potatoes in  the large round mold, cover the octogonal silpat and cook for 4 minutes. Remove the potatoes from the round mold and slice them thinly. Be careful not to burn your fingers. Spread the sliced potatoes over the silpat, sprinkle with salt and pepper. Layer the cheese over the potatoes, then layer the capocollo ham and finish with the sliced onion rings. Sprinkle with chopped fresh thyme. Bake in oven for 15-20 minutes at 450. Et voila! Serve with a green salad.
