This morning I hosted a birthday party for a beautiful girl named Alexandra. Her mom had asked what she wanted to do for her birthday and she candidly said, I would like to do a cooking class with Miss Cecile again. So today, as she had asked, she and 18 of her friends came for a cooking party. We had a busy morning. We made Santa Sacks out of wontons and boursin, ham and cheese pin wheel, Cupcake ornaments, Lasagna cupcakes, “Candy Cane” out of fresh fruits and small marshmallows, reindeer, and Santa Brownie Hats. And those little girls had much fun making all those things and eating them too;-)
As they were sharing their feast, they all said Thank You to me and to Alexandra for coming up with this great idea! And they all said that they had the best time and it was the best birthday party ever. What a compliment! I am so glad that they all had fun;-)
Well I will share with you this recipe that is so so easy and yet is so yummy.
Ingredients:
- 1 bag of brownie mix ( I used the Ghiradhelli with extra chocolate chips)
- 1/3 cup of oil
- 1/3 cup of water
- 1 egg
- 1 cup of heavy cream
- 2-3 tbsp of sugar
- 1 tsp of vanilla extract
- 1 box of strawberries or about 30 strawberries rinsed and cut ( to remove the stem and the white part)
In a mixer, beat the oil, water and egg until the mixture is fluffy and doubles in volume. Add the brownie mix and mix well for a few minutes until it is homoegeneous.
Pour the content in a flexipan that you would have placed on a perforated sheet and cook in a warm oven at 325 for 18-20 minutes.
Meanwhile cut the strawberries and set them aside.
While the Brownie is cooking, place the cream, sugar and vanilla into a mixer and whip until you have hard peaks. Pour the whipped cream into a large ziploc bag and place it in the fridge.
Once the brownie is cooked, remove it from the oven and let it cool.
When it is cool, use the 1 inch cutter and cut circles out of the brownie. Set those brownies on a platter.
Take the whipped cream out of the fridge. With scissors cut one corner out of the plastic bag and squeeze some cream over the brownie. Place a strawberry on top of the whipped cream. And squeeze a dot of whipped cream on top of the strawberry to make it look like the santa ponpon;-) C’est tout!!!
