Olive and Ricotta Cigars


Entertaining is so much fun, especially right now. The house is decorated for the Holidays and it is the time to be jolly;-)

But getting ready for a party can be such a daunting task with all the things that need to be done and all the food that needs to be made. Of course you could buy pre-made food, but when the food is home-made, your guests really really appreciate.

Well this evening I will present you a recipe that requires very few ingredients, that is very easy to prepare and that is good.

Ingredients for 20-25 cigars:

  • 1 pack of phyllo pastry thawed out
  • 1/3 cup of olive tapenade
  • 2/3 cup of ricotta cheese or goat cheese at room temperature
  • salt and pepper to season

In a small bowl, mix together the ricotta and the olive tapenade. Add salt and pepper to taste. Open the package of phillo dough and with scissors, cut the phillo dough in half in its length and then again half in its width.

Spoon 1/2 tsp of the mixture at the end of one rectangle and peel 2 sheets of the rectangle. Roll the phillo dough over the mixture and keep rolling to make it a cylinder, or a look-alike cigar. Repeat this process until you have used all the mixture.

Place the cigars on a silpat that has been placed over a perforated sheet and cook in a warm oven at 375 for 10-12 minutes. C’est tout!
