Bacon, Parmesan and Beef Meatballs

Summer is here, and with it my summer vacation. One of the many perks of being a teacher is to have a very long summer vacation. And I am really enjoying it. No longer 5:00 am wake up calls, and no longer rush, rush, rush in the morning;-). It is gym in the mornings, lunches with friends, shopping here and there, and sunbathing;-))).

You would think that with all this free time on my hand, I would be bored and would have plenty of time cooking but between the gym, the kids and other things the day is passing by too quickly!!! And with the beautiful weather outside, I don’t really feel staying enclosed in my kitchen cooking dinner…

But dinner needs to be made….So why don’t I share with you another of my quick and delicious recipes; Bacon, Parmesan and Beef Meatballs;-))) You will just love it!!!

Ingredients for the meatballs to serve 6-8 people ( about 5-6 meatballs per person):

  • 2 lbs of ground beef
  • 3/4 cup of parmesan shredded
  • 3/4 cup of bacon bits
  • 3/4 cup of bread crumbs
  • 1 tbsp of fresh oregano chopped
  • 1/4 tsp of cayenne pepper
  • 1/8 tsp of pepper
  • 1/2 tsp of garlic salt
  • 2 eggs
  • 2 cans of 24 oz. of tomato sauce ( I used from Barilla )

Mashed Potatoes:

  • 6 medium-sized potatoes
  • 2 cloves of garlic
  • 1 cup of italian cheese
  • 2 cups of milk, or cream
  • 1/2 tsp of salt
  • 1/4 tsp of pepper
  1. Place all the ingredients listed for the meatballs except the tomato sauce in a large bowl.
  2. Either  with your  hands, or a kitchen mixer mix everything.IMG_1763
  3. With a small cake scoop, make meatballs.IMG_1764
  4. Place the meatballs into a pan of your choice. I used the deep flexipan from Demarle. I like those pans because they are non-stick and clean so well.IMG_1765
  5. Cook the meatballs for 10-15 minutes at 400.IMG_1807 2
  6. Then transfer the meatballs into a large casserole pan of your choice. I used  the grande round from Demarle  that I placed onto a medium perforated sheet for support, and pour 2 cans of tomato sauces of any flavors.IMG_1768
  7. Place the meatballs back into the oven and cook them for another 10-15 minutes.IMG_1771
  8. Meanwhile prepare the sides of your choice. I decided to fix garlic and italian cheese mashed potatoes.
  9. Peel the potatoes, and dice them. You can either place the potatoes into a large pot, cover them with water, add 1 tsp of sea salt,  and cook them until they are soft.  For an easier solution, you can place the diced potatoes into a large round mold.IMG_1769
  10. Add the pressed garlic, then place the octogonal silpat atop the round mold, and microwave the potatoes for 15 minutes.
  11. When the potatoes are soft, drain the water, mash them. Then add the cheese, the milk or the cream and whip them.IMG_1772
  12. Spoon the potatoes on each plate and place the meatballs atop the mashed potatoes. Sprinkle some cheese, and enjoy!!! Miam…IMG_1774

  • Servings: 6-8 people

Ingredients for the meatballs to serve 6-8 people:

Cinnamon Rolls…

The first time I came in the USA was in 1993, It was just a few months shy of my 21st birthday. It was an eye-opening experience I will tell you… If at first I was not really impressed with the environment I had landed in ( Mid June, 100 degree weather, high humidity, lone house amid large acreage, in the rural environment of South Carolina…), I soon learned to like it, and appreciate it. Today it will be exactly 21 years since I first put my foot on this strange land, and I am happy to have stayed and to have chosen it as my home. One of the thing that really took me by surprise, at first, was the size of everything: big houses, huge plated dinners, large interstates, gigantic cars…But what surprised me the most was what people ate. I could go on and on for hours about the food I was not accustomed to see, but today I will talk about cinnamon.

I never liked cinnamon growing up. I despised it so much, in fact, that it would me make me sick. I could not smell it, much  less eat it.

Cinnamon is pretty inexistant in France. You will see it, at times, in recipes of homemade ginger bread, but you will never see it mixed with apples.  So I really was astonishing to me to see the amount of cinannon that was used here in everything: Apple pies, pies, sweet potatoes casserole, gum, candies. The family,  I stayed with that first year,  would prepare cinnamon toasts which was a piece of bread slathered with butter, sprinkled with sugar and cinnamon, and then toasted. The odor was so strong, it would make me want to exit the room. As time went by, though, my sensitivity to cinnamon disappeared. I really think it is because I got used to smell it in everything, especially at Christmas and Thanksgiving.

Today after 20 years, I cook with it occasionally, and it will not bother me. I actually like it. How funny how your senses change and adapt over time;-)

How ironic that after 20 years, I am sharing with you a recipe of Cinnamon rolls. Why did I cook them?? For whatever reason, I craved to eat them. And I was not about to buy the Pillsbury kind;-)))

The recipe I used is from Paula Deen. I adjusted a few things though.

This recipe is good to make about 14 cinnamon buns:

Ingredients:

  • 1 package of yeast
  • 1 cup of warm milk
  • 1/4 cup sugar
  • 6 tbsp of butter melted
  • 1 teaspoon salt
  • 1 egg
  • 3 1/2 to 4 cups all-purpose flour

Filling:

  • 1 stick of butter melted 
  • 3/4 cup of sugar
  • 1-2 tablespoons ground cinnamon (in the recipe, it suggests using 2, but I used one and it was plenty!!)

Glaze:

  • 6 tbsp of butter at room temperature
  • 1 cup of sugar
  • 1 teaspoon vanilla extract, or vanilla bean extract ( much better)
  • 6 oz. of cream cheese at room temperature.IMG_1796
  1. Turn the oven to 2oo, or turn your warming oven if you have one.
  2. In a small bowl, dissolve the yeast in about 2 tbsp of warm milk,  and set aside.IMG_1779
  3. In a very large bowl mix milk, sugar, melted butter, salt and egg.IMG_1780
  4. Add 2 cups of flour and mix well until the dough is homogeneous.IMG_1781
  5. Then add the yeast.
  6. Finally add the rest of the flour ( it may another 1 1/2 to 2 more cups).
  7. Knead dough inside the bowl.IMG_1782
  8. Cover the bowl with a plastic wrap and place the bowl in the oven that you would have turned off and propped the door open. Let the dough rise for 1 to 1 1/2 hours.
  9. When time is up, take the dough and place it on the roulpat ( non-stick silicone map) that you would have spread over you counter.
  10. With the rolling-pin, roll out the dough  into a 11 by 20-inch rectangle. You will not need flour is your dough is the right consistency and is not sticky. I did not need any.IMG_1783
  11. Place the butter in a small bowl, melt it in the microwave for 30 seconds or until it is melted and with a brush, brush the butter all over the dough.
  12. Mix sugar and cinnamon and sprinkle over the buttered dough.IMG_1784
  13. Roll the dough up from the top so that you will end up with a 20 inch long roll.IMG_1785
  14. Cut the rolls into 12 to 15 slices.IMG_1786
  15. I placed mine into the large round mold, but it was not enough room for the dough to expand, so you will use the grande mold. Place cinnamon roll slices close together in the pan. If you have any melted butter, drizzle it over the dough. IMG_1787
  16. Place the pan back either into the oven to the warming drawer,  and let rise until dough has doubled, about 45 minutes.
  17. Bake for about 20 minutes or until it is a nice golden brown color.IMG_1788
  18. While the rolls are baking, prepare the glaze. Place the butter and cream cheese in the microwave and warm them up for 20 seconds so that they are soft. Place the cream cheese, butter, sugar and vanilla into a kitchen mixer, and beat the mixture on high.
  19. Spoon and spread the glaze over the rolls as soon as you are removing them from the oven.IMG_1790
  20. And try not to eat them all at once. Yummy!! And yes, I have been eating them. Such a yummy easy treats for my weekend breakfast;-)) You TRY!!!!IMG_1793

French Salad with Lemon Flavored Oven Roasted Salmon

What do you eat when you are not very hungry, you do not really want to cook, but you are trying to be really good??? Most people would say cereals, some people would say popcorn and some would say salad. It is not very often that I don’t want to cook, but with the beautiful days coming, I have been more keen on reading my book in the sun, than spending time in my kitchen. Still one has to eat, and since we don’t generally eat out, or order out, someone ( me) has to cook. Last night was meat salad and pan roasted potatoes for my husband, and salad and salmon for me- good, easy and satisfying;-)

Ingredients for 1-2 person:

  • 1 petite filet of salmon ( fresh or frozen that you would have thawn out)
  • 1 small head of boston lettuce
  • 1-2 tbsp of olive oil
  • 1/2 -1 tbsp of balsamic vinegar
  • 1 tsp of strong mustard ( grey poupon or even stronger)
  • 1/16 tsp of pepper
  • 1/8 tsp of salt
  • lemon
  1. Place the salmon on a pan. Here we will be using either the deep flexipan or the medium silpat that we would have placed on the medium perforared sheet.
  2. Sprinkle some salt, pepper and drizzle a bit of lemon juice over the salmon. Cook in the oven for 8-10 minutes ( depending on how you like it).
  3. Meanwhile rinse the salad, and prepare the salad dressing. In a small bowl, mix all together the vinegar, oil, mustard, salt and pepper and stir well so that it will thicken ( yes this is the true French dressing ( not that yucky orange looking dressing that we sell here;-(
  4. Add the salad to the dressing and toss well.
  5. Then add the salmon that you would have cut in smaller pieces.
  6. Toss again and serve. Yum!! A real delight, fresh, light and tasty;-)

Easy Pan Sauteed Potatoes

Whoah.. I cannot believe that it has been several months since I wrote or posted something. I apologize!!! Life has been busy … I am certain that it has been the same on your side of the world. Well one of the benefits of being a teacher, is that you have several weeks off in the summer. This allows me to do all the things that I have been wanting to do, but did not find the time to…

One of them has been sleeping a bit later, and the other one has been to write my recipes so here it is.

Today the recipe will be very simple, and very quick. I will serve as a side, and I hope that you will enjoy it.

Ingredients for 4: 

  • 6 medium-sized or 8 small Yukon Gold
  • 1 cloves of garlic pressed
  • 1 tsp of fresh chopped parsley
  • salt
  • pepper
  • 2 tbsp of butter ( or goose, or duck fat)
  1. Peel the potatoes, cut the potatoes in slim slices,  and steam them. You can steam them however you can ( in a microwable bag, a steamer) until they are steamed, but they are still firm. If you have some of the Demarle cookware, place the potatoes into the large round mold, that you would have placed on a plate. Cover the large round mold with the octogonal silpat and microwave the potatoes for 6 minutes.
  2. Carefully lift off the octogonal silpat to let the steam out. IMG_1750
  3. Meanwhile, in a large frying pan, warm up 2 tbsp of duck/ goose fat or butter until it is sizzling.IMG_1752
  4. Add the potatoes, and cook them over a medium high stove. Let them cook a bit ( 1-2 minutes) before flipping them.
  5. And continue the process until the potatoes are the texture that you want.
  6. When the potatoes are cooked, add the chopped parsley and garlic and stir.IMG_1753
  7. Season with salt and pepper and serve warm.

Ingredients for 4:

Bouchon de Cauliflower

As a child, I remembered staying hours at a table to finish my vegetables. I hated peas. Especially the ones that I called “facon  grand-mere”. If  you grew up in France, you would be able to recall those peas I am talking about, the ones cooked with sauteed onion, and maybe lettuce. It sounds disgusting, but now that I am adult, I love those peas.

Do you have one of those picky eaters  at your house???

Though I was not a fan of vegetables, because they were often, just steamed and seasoned with salt and pepper,  I liked cauliflower. I liked them because my mom would make a casserole like dish. It included a white sauce ( also called bechamel sauce) and a lot of swiss cheese. I guess yon can say that it was a healthier version of broccoli and velvetta.

I wish my mom had found ways to disguise the other vegetables I hate so much;-)

Today I would like to share with you a retake of the Cauliflower Béchamel Dish if you will. It is easy to make, yummy, and can be served as an appetizer. Today I used cauliflower, but you coud use any other vegetables to hide;-)

Ingredients for 20 bouchons, or 20 bites:

  • 250 gr. or about 1 cup of cauliflower ( or any other vegetables)
  • 20 gr.  or about 1/8 cup of parmesan
  • 30 gr.  or about 1/3 cup of swiss cheese
  • 30 gr.  or  2 tbsp of flour
  • 20 cl or 7 oz of milk
  • 20 cl or about 7 oz. of cream
  • 2 eggs
  • salt
  • pepper
  • camembert or Brie
  1. Steam the vegetable so that it will be soft enough to mash. Of course you can do this however you wish. At my house, fan of the Demarle products, I like to use my large round mold. I place the vegetable in the large round mold. I cover the mold with the octogonal silpat, and steam the vegetables for 3minutes.IMG_1256
  2. With a fork mash the vegetable, here the cauliflower.IMG_1257
  3. Add all the other ingredients and mix well.IMG_1258
  4. Season with salt and pepper so that they will be to your liking. A dash of each will be enough though.
  5. Place the mini muffin tray on a perforated sheet. If using regular metalware, do not forget to spray the muffin tray with lots of oil so that the cauliflower bites will not stick. No need to do this with the demarle cookware.
  6. Cut little squares of brie, or camembert of about 1/2 inch or 1/5 cm and place them in the opening of each mini muffin.IMG_1260
  7. Pour the mixture over brie.
  8. Cook in a warm oven at 400 for 15-20 minutes.IMG_1261IMG_1262

Mint Chocolate Pie, for PI Day

Some of you probably know that I teach school in my spare time;-) Yes, I have a job, a real job that helps me pay my bills;-) I teach French to children aged 5 to 14. I love it!!! Well this week, has certainly been an interesting week with some of my students talking about  Pi day. Every time they came to my room, they kept asking if I knew that Friday was Pi Day, and telling me how crazy it would be. I remembered that when my children were in Middle school, they had a huge celebration at the end of their Pi Unit and were invited to bring in pies to share….Friday turned out to be a normal day, I was worried that they would be crazy coming to my class after eating pies, but the day went unnoticed;-) Yeah!!!

I did not really paid attention to that Pi Day until this morning, when I looked at all the e-mails that mentioned this historical moment???

So I looked it up…

Did you know that this year March 14 is a very special Pi Day, become it only comes once in a century.

Why, because the number Pi is 3.141592653589793. And today being the 14th of March 2015 at 9:26 and 53 is closer to that number;-)

So what to do on this special day, well of course we need to bake some forms of pie, since we are celebrating the first five digits in the ratio of the circumference of a circle to its diameter.

In this special day, I will share with you a fun, easy recipe that are to please the little and the big ones: Chocolate Mint Pies.

Ingredients for 30-32 Medium Sized Tartlets

  • 5 oz. of bitter-sweet chocolate Chips ( I used Ghiradhelli)
  • 5 oz. of Andes Chocolate Chips
  • 5 oz. of Heavy cream
  • 1 pack of sugar cookie dough ( I used Pillsbury’s)
  1. I guess you can use a mini muffin pan, but I used the Demarle Medium Tartlet Silpain  that I placed on a medium perforated sheet for even cooking. The dough does not stick and makes a beautiful finish when you use the silpain;-). IMG_1330
  2. Cut the sugar cookie dough with a sharp knife in rounds of about 1/6 to 1/4 of an inch.IMG_1322
  3. Place each round in each tartlet opening, and press them down gently. If you want to use the whole log of sugar cookie, you will need to make two batches. IMG_1324

  5. When the cookie dough is baked, remove the pan from the oven, and with a very narrow shot glass, or a shaper press the dough down so you will have  a perfectly shaped and deep pie shell. IMG_1328IMG_1329
  6. Let the pie shells cool down at room temperature.
  7. Meanwhile, prepare the filling which is a sort of ganache. In a small bowl, place the chocolate chips and the andes chips.IMG_1323
  8. Warm the cream either over the stove top, or in the microwave until it boils.  I warmed mine up in the microwave because it only takes 90 seconds to 2 minutes.
  9. When the cream is hot, pour it over the chocolate chips, but DO NOT STIR!! IMG_1325The chocolate chips will need to melt on their own. After 1 minute, start stirring either with a fork or a small whisk and stir until it becomes an even smooth texture. If you still see a few grains or the ganache is not completely smooth, warm it up over a bath of boiling water for a few minutes, or back in the microwave for 30 seconds. IMG_1326
  10. Pour the ganache into a ziploc bag, cut the corner and carefully fill the pies.
  11. Place the pies in the fridge to cool and for the chocolate ganache to take. IMG_1331
  12. When they are completely cold, put a dab of frosting into a small zilpoc bag and decorate to make the Pi Sign. Et Voila!!! Yum, easy 😉

Chocolate Mint Pi

  • Servings: 10 people

Ingredients for 30-32 Medium Sized Tartlets

  • 5 oz. of bitter sweet chocolate Chips ( I used Ghiradhelli)
  • 5 oz. of Andes Chocolate Chips
  • 5 oz. of Heavy cream
  • 1 pack of sugar cookie dough ( I used Pillsbury’s)
  1. I guess you can use a mini muffin pan, but I used the Demarle Medium Tartlet Silpain. The dough does not stick and makes a beautiful finish when you use the silpain;-).
  2. Cut the sugar cookie dough with a sharp knife in rounds of about 1/6 to 1/4 of an inch. Place each round in each tartlet opening, and press them down gently. If you want to use the whole log of sugar cookie, you will need to make two batches.

Cauliflower Bites

Winter vegetables are very limited. There is not much more besides  roots, carrots, cauliflower, broccoli and cabbage. Of course, I could be eating all that my stores offer ( which is everything), but as a French person, I believe it is best to eat fruit and vegetables that are in season.

I am not fan of cabbage, and my family do not like carrots.  As the result, I often cook brocoli and cauliflower in the winter time. It is not a problem because I like them both.

You  can do so many things with both vegetables! You can roast, puree, steam, saute them,make soups.. So many things in fact that that if you were to open my fridge at any point in the winter, you would find both;-).

Well, when I looked in the fridge today, I realized that I had two bags of cauliflower. Since I had already made a soup and a casserole a few days ago, I did not want to serve them again as such. I had been meaning to make that cauliflower pizza that has been going around on faceboook, but time has been so scarce lately that I have not had time to make it and I was not really in the mood for pizza…

Anyway, I was adamant about making something with my cauliflower this evening. I had seen the recipe from DamDelicious , that I decided that I was going to give it a try this evening. Except I was going to make it somewhat  healthier;-)) and somewhat less messy and faster.

Here we go:

Ingredients for 6-8 people:

  • 3/4 bag of cauliflower from Costco, or 1 1/2 lbs of cauliflower heads
  • 3 eggs
  • 1/2 cup of parmesan
  • 1/2 cup of italian bread crumbs
  • a spicy seasoning of your choice, I used Zesty Mediterranean from Demarle

Dill Dipping Sauce:

  • 1 tsp of dill seasoning from Demarle
  • 2 tbsp of mayonnaise
  • 4 tbsp of sour cream
  • salt and pepper to taste
  1. In a small bowl, place the eggs and mix them well.IMG_1296
    In another bowl, mix the breadcrumbs, the parmesan and the zesty Mediterranean Spice from Demarle. Set aside.IMG_1297
  2. Either cut the cauliflower head into small florets or buy the florets, That is what I did.
  3. Dip the florets into the egg,IMG_1298
  4. Then into the parmesan and place them onto the silpat that you would have placed on a large perforated sheet. IMG_1299
  5. Roast at 425 for 10 minutes. You can eat as such, they are quite yummy, or you can make a dipping sauce.IMG_1301IMG_1304IMG_1306
  6. Mix all the ingredients for the dipping sauce together, and enjoy with our reservation. Miami, miam;-)IMG_1307
