Pizza Rolls

Looking for an easy thing to make for lunch?? You can make those cute pizza rolls for lunch. They are easy, yummy and a breeze to make. If you are making too many which is the case with this recipe, you can freeze them and use them as you need them. Much cheaper and a hundred time much healthier than hot pockets;-)

This recipe was adapted from Appetizers from Taste of Home.

Ingredients for 15-18 Pizza Rolls :

  • 3 cups of italian cheese ( Mixed Italian Cheese, or any other)
  •  8 oz. or 1/2 italian sausage cooked from Jimmy Dean 
  • 1 whole package of pepperoni diced very thinly from Hormel.
  • 1 red pepper diced very thinly as well.
  • 1 medium onion diced very thinly as well.
  • 12 oz. or about 1 /2 jar of tomato sauce
  • 2 eggs ( optional)
  • 2 packs of large wontons
  1. Mix all the ingredients together in a large bowl.photo 3
  2. photo 4Place the rectangular roulpat over the counter for easy filling and cleaning.
  3. Place the wontons flat onto the roulpat.photo 5
  4. With a pastry brush, brush the outer rim of each wonton with water.
  5. Place 1/4 cup of the mixture in the middle of each wonton, and only 1 tsp for the small wonton.photo 1
  6. Roll the wonton over the mixture, and fold the wonton over to roll into a sausage. Fold the sides in to close the “pizza tube”.photo 1
  7. For smaller wontons, you can do the same, or you can press the sides together to make little purses.photo 2
  8. Place it on the large silpat that you would have placed onto a large perforated sheet.
  9. Repeat the steps until you have used all the mixture.
  10. With the same pastry brush, brush some olive oil over each wonton.
  11. Cook the pizza rolls in the oven for 12-15 minutes at 400. photo 2Serve with more tomato sauce. My son actually likes to eat them with ranch dressing. The combination is quite good, as the sauce counteracts against the spiciness of the pizza. Try it . It is very good!!!

Gorgonzola, Purple Onion and Honey Pizza


photo 4Yesterday like most Sunday, I tried to cook a good dinner. As I set out my ingredients for all I intended to cook for dinner  ( scalloped potatoes, Ribs, Green Beans and Strawberry tart)t I got hungry. I could have just snacked on things here and there but I had been dreaming about fixing pizza with gorgonzola and honey and decided to fix it as our appetizers.

I used whole wheat tortillas in the past to make quick pizzas, and since I had a few left over from a previous dinner, I decided to make my pizza with it. Whole wheat tortillas is a much healthier substitution to pizza dough, and it cooks much faster.

Ingredients for 4 individual pizzas:

  • 4 whole wheat tortillas
  • 24 thin slices of gorgonzola
  • 1/2 purple onion sliced very thinly as well
  • pepper
  • 4 tsp of honey
  1. Turn the oven to 400.
  2. Place a large silpat on a large perforated sheet. Place the four tortillas on the large silpat.
  3. Lay the gorgonzola all over each tortilla.photo 1
  4. Then top the gorgonzola with the sliced purple onion.photo 2
  5. Sprinkle some pepper.
  6. Cook in the oven for 5-6 minutes. I placed my pizza on the top tier of the oven.
  7. photo 3Warm the honey for 10 seconds in the microwave and drizzle it over each pizza.
  8. Cut in squares and enjoy as an entree, or as an appetizer as we did here;-)photo 5

Smoked Salmon Pizza


What did you guys do this Friday? Me, not a whole lot. There is a ton I could have done, a ton I should have done but after a full week back at school, I was ready to kick my heels and take it slow. I was adamant in taking care of myself. So I first went to the gym for an hour, hung at the pool for an hour or two and went for a long run. Of course after I was done with all my “playtime” there was hardly time to cook dinner so I had to find something in my fridge. And I found whole wheat tortilla, smoked salmon, and other various vegetables.

Salmon pizza is one of my favourite pizza.When I was living in France and we would go to pizzeria, I would always order the quatro pizza or the salmon pizza. So having this bit of smoked salmon in my fridge made me think of making my own.

Ingredients per person: 1 whole wheat tortilla, 3 tbsp of creme fraiche, about 100 gr. of smoked salmon, a few tbsp of very thinly red purple onion. 1 tsp of chopped chives,

PLace the whole wheat tortilla on the large silpat that was placed on a perforated sheet, spray the creme fraiche over the whole wheat tortilla, lay the salmon filet over the creme fraiche. Then spread a few onion slices and the chopped chives over the salmon. Cook the pizza in a warm oven at 415  for about 5-7 minutes.

Serve with a salad. Et voila!
